Pick up your oatmeal




I have a mild case of ADD when it comes to cooking.  I get bored with always making and serving the same thing over and over again.  I also really love the convenience of having my little guy feed himself so I can get everything else situated in the morning.  One day, I was spoon feeding him oatmeal and I thought, "wouldn't it be so nice if he could pick up his own oatmeal and feed it to himself??"  SO, I Googled oatmeal ideas for kids and found (drumroll please….) Banana Oat Breakfast Cookies


Makes 12 breakfast cookies 


Ingredients

1 1/2 cups uncooked oatmeal- I use multigrain
2 ripe bananas, mashed with fork until creamy 
1 cup applesauce- I use a natural applesauce without any high fructose corn syrup
1/3 cup raisins
1 tsp vanilla extract 
1tsp cinnamon

  
Directions
1.Preheat oven to 350 degrees
2.In large bowl, mash bananas with a fork until creamy

3. Add in rest of ingredients and mix with spoon until combined

Let sit for 10 min or so

4. Drop large spoonfuls of cookie dough on to a greased baking sheet (I spray mine with pam baking spray) and flatten into patties




Bake for 20-25 min at 350 degrees or until browned


Viola!  Oatmeal you can pick up with your hands!  This is great for breakfast or for snacks!  I especially like giving these to him instead of graham crackers if he needs a snack in the car because it doesn't leave all the crumbs!
